Compact head consisting of maroon-red leaves. Radicchio shape is similar to that of a brussels sprout. Leaves turn from bright green to deep maroon-red as the radicchio plant matures and growing temperatures become colder. Radicchio flavor is distinct and slightly bittersweet.

May be used raw in salads.
